Karbor
A pearled grain that releases starch with restraint and retains clear definition through the final off-heat finishing.

On the edge of Novara, where irrigation channels and rice fields open towards the Alps, we farm Podere Prati Breja. Here, water, soil and time shape three distinctive expressions of rice.

The collection
Karbor, Gioiello and Solitario are grown on the same land at Podere Prati Breja, yet each answers to a different culinary gesture: the measured creaminess of white risotto rice, the aromatic profile of wholegrain black rice and the texture of wholegrain red rice.

Our risotto rice
In risotto, Karbor absorbs flavour without losing definition and releases its starch gradually. It lends itself to a smooth, controlled finish and delivers a precise balance, from the home kitchen to professional service.
A voice from Podere Prati Breja
Here, where it is grown, we tell the story of Karbor through the voice of those who cultivate it: the character of the grain, our agronomic choices and a quality nurtured season after season.
Meet Roberto and Federico
Podere Prati Breja
On the edge of Novara, we cultivate more than 125 hectares of rice fields. We observe the soil, manage the water and attend to each field throughout the season: this is where quality takes shape, before milling and processing begin.
Documents record Subtemoneta in 1087 and, in 1953, the beginning of Angelo Aina’s tenure at Podere Prati Breja. In 1999, the Novara Chamber of Commerce recognised our family’s farming activity as uninterrupted since 1937. Different dates, united by the continuity of work we carry forward today.
The harvest · At the heart of the season
The harvest brings together months of observation, water and waiting. We follow every stage at Podere Prati Breja, from the ripening of the panicles to the selection of the grain, so that its quality reaches the table intact.
We read the water, soil and ripening, respecting the particular rhythm of each field.
We choose the moment when the grain reaches its finest balance and maturity.
Careful selection and slow stone milling respect the integrity of the grain.
Vacuum packing protects the rice and preserves its qualities until opened.

Articles and awards trace our journey through verifiable sources and dates: from the press and the WineHunter Awards to the Premio Mario Preve.

Podere Prati Breja · Novara
From Podere Prati Breja, the eye follows irrigation channels and rice fields, crosses Novara and reaches the outline of the Alps. This horizon gives a sense of scale to our land and to the work through which we care for it.
Irrigation channels, springs and waterways
Irrigation channels, springs and waterways compose the water system of Podere Prati Breja. We follow the water from field to field: it sets the rhythm of cultivation and connects the estate to an agricultural history far older than our own.
The Fontana Rovatella and historical records show how this system has endured through the centuries, continuing to shape the fields.

When rice becomes landscape
Created with Gioiello black rice by artist Livio Bourbon for the 90th anniversary of Ente Nazionale Risi, in Castello d’Agogna. A living work in which an agricultural gesture becomes landscape.
Environment and biodiversity
Flower-rich field margins support pollinators; camera traps reveal crested porcupines, European badgers and red foxes at the boundary between woodland and rice fields. We observe their presence to understand the balance of the estate and guide our choices with care.

After dusk, camera traps record the quiet movements between the woodland and rice fields.
The family today
We are Roberto and Federico. Together, we lead RisiPreziosi and follow every decision from field to pack, carrying our family’s farming continuity into the present.
Quality begins long before the table.
